Unfortunately, the match against the Luca Goers as part of the story will not net you this achievement.
Once you have completed it, win or lose, it will unlock the ability to play Blitzball and enter tournaments from every Save Sphere from here on in.
Once this has been unlocked, you could start trying to win a tournament - however, the Aurochs need a lot of work to be a competitive team! If you are keen and can't wait, to increase your chances you really need to have learned the Jecht Shot (Which is an achievement in itself) This shot will allow you to freely remove up to 2 defenders (for the HP cost of the shot) - equip it to Tidus who will be your main threat.
The recommendation though is to start scouting Spira to pick up free agents who will immediately improve your starting lineup.

Letty is a pretty good midfielder due to his high passing stat
General Tips
Forwards - Tidus is likely to be a main stay of your team as he has a decent starting stat and can use Jecht Shot early - he'll likely level up as you play and recruit. A high endurance stat to go with high shot is also useful when looking for a forward partner
Midfield - A high passing stat is key here, Letty is not a bad player right from the start
Defenders - Ideally at least one of your defenders needs a decent passing stat, this way they can play it out to your midfielder/forwards. If the partner has a lower stat they can simply pass it to their fellow defender.
All players - With a high speed stat you can outrun the opposition avoiding the need to break attacks which is useful!
Make sure to pass the ball around your team a lot so they all gain experience to level up!
When I get more time I'll try and add some general Blitzball tips.

It's a good thing to keep in mind that you can save your game between matches. Once you beat a team, back out of the blitzball screen and save. Then if you run into bad luck in the next match, just quit and reload.

I had another bit of advice as well that made this so much less tedious. You can scout other teams players if they don't get a renewed contract. After so many games every player has their contract expire and whether they get renewed or not is random. With that in mind, you can snipe Nimrook (best goalie in the game) from the Al Bhed Psyches to make the entire blitzball minigame a joke.
Wait til you have the airship and you can find him in the room to the left and down the stairs from the bridge. See how many games he has with X. Then go play exhibition matches against the Psyches (forfeit by pressing Y as soon as you get ball to speed this up). When Nimrook has one game left on his contract, save your game. Then play one more exhibition match and see if he gets renewed. If he does, reload and try again. When he goes up for grabs head back to that room and hire him. With him on your team and Tidus knowing Jecht Shot, everything else becomes irrelevant. You will never lose a game again making this, the achievement for getting Wakkas overdrive, and getting Wakkas celestial weapon a breeze.
