There are two separate sections where you'll ride a Chocobo in this chapter. In either one there will be multiple sections where you need to jump over cars or large enemies. Simply press  and while you're in the air, press it again. I don't believe the rock formations count as obstacles, since I definitely landed on top of one before jumping the second time instead of doing a traditional double jump and still got the achievement.
