In the Chocobo riding scene, you won't have control over your feathery friend other than to move the camera and jump. To get this achievement, you'll come across certain obstacles in the path that the chocobos will jump over automatically. All you have to do is when your chocobo jumps, just click on the jump button immediately after to do a double jump. Unnecessary for this portion of the game, but necessary for this achievement. Hope this helps.
The, Pants, Party
There are two separate sections where you'll ride a Chocobo in this chapter. In either one there will be multiple sections where you need to jump over cars or large enemies. Simply click the icon on screen and while you're in the air, click it again. I don't believe the rock formations count as obstacles, since I definitely landed on top of one before jumping the second time instead of doing a traditional double jump and still got the achievement.
