How to unlock the Challenge Master achievement in Football Manager 2021 Xbox Edition - Definitive Guide

Edit: Patch notes released 20/1/21 (v 21.2.2) this should unlock as intended in the description. Have not tested this myself as I used the workaround below so I'll leave the info below for those who may need it.
As of the latest patch (v. 21.1.13), this achievement does not unlock as expected if you have completed any of the previous challenges before this update, however it is unlockable. Simply complete any of the challenges you did before, even the same save file. I loaded my Southampton "The Invincibles" file, on league game 37/38. After completing that game, and progressing a few days, the challenge completed page popped up, along with the achievement.
For any challenge-specific guides, I recommend looking at those achievements individually.
