How to unlock the Scratch That achievement in Forza Horizon 2 Presents Fast Furious - Definitive Guide
In order to get a "trading paint" you have to be going over 50 mph and rub up agaisnt the side of another car.
This can only be done in freeride, and not while doing a race.
Some cars go too slow for you to rub up on at 50MPH so I suggest doing this on a highway.

May be worth noting that this only works on cars with a name above it, so other racers. As far as i tested, this does not work with random civilian cars.

Trading paint skills are performed by scraping by opponents or traffic as you pass them slowly, can be in either direction. Perform 5 of these and the achievement is yours.
Here's a video demonstrating each skill, Burnout, Wreckage, Drift, Speed, Air, Near Miss and Trading paint (In that order - Trading paint @1:48)

All of the "skill" achievements are incredibly easy and you shouldn't even have to try for most of them. In the case of "trading paint" skills, you must be going at least 50 mph when you do it, and you can only unlock it in free roam. I'd recommend not going too much over 50 because lightly tapping cars at high speeds gets a bit difficult.
You'll know when you have performed one of the "skills" because it will display a little score near the top of the screen for it and say which skill it is ("Good [skill]!").

Simply side-swipe a car while driving in free-roam or in races. Do this three times to unlock the achievement.
