Championships become accessible upon completion of the Goliath race.
Nothing new here - they're the same as the base game and Blizzard Mountain. Pick an event, select "championship" and then pick either the default championship, or blueprint your own to shorten the length of the championship if you want to breeze through.
The achievement will unlock in the rewards section of the final race.
