You will need the win 3 showcases and 3 series to win the Evolution Championship, or 4 series. I advise to do the showcases as it will grant you a car each time. And first go for the series for which you own eligible cars. Often you will win cars later that you can use for the remaining series.

Unlocking the Evolution Championship first requires you to complete the Breakout Championship.
This is the third Championship that consists of 9 Series worth up to 2,000 points each, and 3 Showcases worth 400 points each. You’ll need 7,000 points this time to complete the Championship. Winning a series will get you the most points to progress. So winning 3 series and 3 Showcases will give you enough points to complete the Evolution Championship.
