How to unlock the Evolution Elite Champion achievement in Forza Motorsport 7 - Definitive Guide
There are two requirements you need to fulfill in order to 'fully complete' a Championship - you need to complete all the events in the Championship, including the Elite events that only unlock once you win the Forza Driver’s Cup, and you must obtain a minimum number of Series Points from these events. This means you do not have to win every race in the Championship, just meet a certain SP threshold.
For the Evolution Championship, you need to complete 13 series and 5 showcase events to 'fully complete' the Championship, scoring a minimum of 22,000 Series Points along the way.

"including the Elite events that only unlock once you win the Championship"... just to clarify, you have to win the championship in all 6 sections of the Forza Drivers Cup in order to unlock the elite events. Once you do that, 4 new series, and 2 showcases will open up in the Evolution Championship that you have to complete to win this. I finished all events in it and couldn't figure out why it wasn't unlocking, and I just found that on another site. Just adding for clarification.

To fully complete the Evolution Championship you will need to finish every Series and Showcase in the Championship. Once the Forza Driver’s Cup has been completed and the Elite races open up there will be 4 new Series and 2 Showcases added. Finish every Series and Showcase in the Evolution Championship for the achievement.
