Grab a boosting buddy, Endurance Forza GT. I set up a private lobby and made a 50 lap race of Daytona tri oval at night. Achievement unlocked for me and my buddy at race end

Right now (December 7th, 2019), this achievement is glitched. it is not updating progress besides you are improving it or not but, since I hope at some point it will be back to work, I strongly suggest you to do this way:
Go to Multiplayer --> Endurance Forza GT.
These are long races, usually around 20+ minutes between 9 and 12 laps depending on each track and, most importantly, there are many with night mode. Try to go with the achievement for the number of laps in MP and then when finish a race, Vote for the next track in night mode. If it is not what you need, just leave the lobby and retry at a later time (20-22 minutes will be good).
I know this is not an exact way but believe me, it is the best way to achieve it, since it is random and also the other players could pick / vote for a non night track, so the chances are low.
I already did the number of laps at night in MP but since this is currently glitched, it did not unlock for me (yet)

The most bugged Forza of all time... At my place : 50 nights, 50 in the rain, 100/300 laps in multi, run on all multi circuits... all blocked... What the hell are they doing at turn 10 ?!?
150 or 160 hours of play, and 6 or 7 blocked successes, I am disgusted.
Even the number of hours of play is blocked lol It remains at 128, I'm much more...

This can be done legit by just playing multiplayer, but it would be a lot wiser to grab a friend or boosting partner to finish this a lot faster. The quickest setup for a race would be:
Track: Daytona Intl Speedway Tri-Oval Circuit
Race Length: 50 laps
Game Type: Circuit Race
Track Scenario: Night
Car Division: Personal preference
Once you finish the race you should unlock the achievement for 50 laps at night.
