How to unlock the Survival of the Fastest achievement in Forza Motorsport 7 - Definitive Guide
Firstly, you need to unlock the showcase by completing the Seeker Championship and unlocking the Breakout Championship.
You will find the showcase on the bottom line inside the Breakout Championship.
After clicking to the race, you need to change the race length. Do this by pressing and selecting assists. Go to the bottom and change the race length to Extra Long.
Change any other assists you see necessary, and also look at the Drivatar Difficulty.
You can change the skill level for Drivatars and receive additional credits: (This only affects the other racers skill and not your assist difficulty).
New Racer/Inexperience/Average +0%CR
Above Average +20%CR
Highly Skilled +40%CR
Expert +60%CR
Pro +80%CR
Unbeatable +100%CR.
Now you're ready to race! This is 69 laps and will take between 2¾ to 3 hours.
N.B. MODS are unavailable to use in this race.

You gain access to the Spa-Francorchamps 100 showcase with the Breakout Championship, which first requires you complete the Seeker Championship. A car is provided for you, so you can do this at any time.
You'll need to adjust the race length to "Extra Long" in the Assists menu after you've selected the showcase. This changes the race length from the "Standard" 23 laps to 69 laps. The race takes roughly three hours to complete. You don't have to win the race, just complete all 69 laps, so you can adjust the difficulty of the Drivatars if you want to get more credits.
The easiest method, however, is to set the assist configuration to "Super Easy". Doing so means you just have to hold RT down and the game does the rest of the work for you. If you have the means of keeping the trigger held down (or whatever button you use to accelerate), you can just set the controller down and do something else for a couple of hours. You may also want to turn vibration off and plug your controller into the console so it doesn't time out and disconnect.
You may not have to do this, but what I did was set the assists at my normal level for the first lap or two until I got into first place (with lowest difficulty Drivatars), and then switched to Super Easy. I found that letting the AI drive while huddled together with a bunch of cars meant I kept ramming into them and not passing them. Then I taped down RT and did some other stuff. By lap 16 I was already lapping the other drivers, and by the time I finished the race I was something like 75,000 feet ahead of second place.

A few things that made my 69-lap experience a little better (9 Jan 2021, Xbox Series X, United States):
1. Two rubber bands (I assigned one of the big paddles on my Elite 2 controller to RT/throttle).
2. Driver skill level: Inexperienced Driver (+0%)
3. I got out in front and then let the "Super Easy" auto pilot do a lot of work.
4. Every couple of laps, after that last hard switch-back turn that confuses the AI, I would hold the brakes. I did this to let the 2nd place car get close, but not too close.
5. The reason I did the braking thing was to (a) have a 'manual jiggle' to avoid my controller falling asleep (b) avoid the AI doing really poorly at passing.
6. By doing #4, I only had to intervene to pass the one 'super slow' 24th place car around lap 38-39.
Then I kept doing the #4 braking thing every 2 laps all the way to the end. Never had to pass any other cars, just kept 2-23 close and only lapped 24 the one time as described above. I was able to do chores around the house and just check in every 5-6 minutes. Took about 3 hours and 4 minutes.

I'd like to congratulate the inventor of rubber bands for making this achievement more tolerable. Even so, I still had to keep coming back to babysit it. If you put the rubber band to use full throttle, you end up lapping the AI before very long, and then what happens is your car pushes an AI car off at a corner, and ends up taking you off too. Then you're stuck facing a wall and needing manual intervention to get back on track.
I thought okay, I'll set the band to just use less throttle, and do slower laps, but at least my car won't push any AI cars off, and I won't have to babysit it. Wrong. What happens is the AI behind you drives at a snail's pace as well. It doesn't overtake even if there's a huge straight road ahead. The AI then eventually sits touching your rear bumper, and at the next corner, it just does a pit manouevure on you, and deliberately pushes you off. Not just a tap mind; it actively drives off the track to make sure you go into the wall.
Words cannot express how abysmal and brain dead the AI is in this game. I've played ZX Spectrum 48k games which had better AI than this game.

Start up the showcase and just before you click start race go into assists then scroll down to length set that to extra long it will be 69 laps and take you about 3 and a half hours to complete.

And where do you find the showcase exactly? Could do with saying in the solution.

The showcase is in the breakout section of Forza cup. It's the next set that you unlock as you start in Seeker then move to Breakout when you have enough points.

The first requirement for this is you will need to have the Breakout Championship unlocked. This showcase is at the bottom inside the Breakout Championship. When selecting the showcase you will need to change the race length. Do so by pressing and then into the Assists. Go ahead and change the race length to ‘Extra Long’.
Now just start the race, but be ready to race for a while as this Showcase is 69 laps and can take around 2 ½ to 3 hours to finish. Once you’re across the finish line the achievement should unlock.
