This is completed in Case 3. From Case 3's Main Menu, hold SHIFT + L to bring up the Secret Save Menu. Choose "Monkey Explores Office - Scene Start" and this will unlock as you load in.

If playing on Xbox, you can access the Secret Save Menu by holding LT, LB, RB, and RT at the same time

In case 3 after you finish the town part of the story you will be able to play as the monkey.
