There are 87 medals you need to win across career mode. As you progress through the chapters you have unlocked, you will obviously unlock the ones you have locked.
There is no real for sure guide for this, but the two classes I always used are Tactical and Assault, with level 3 missiles and machine guns respectively.
My advice would be to just play through and do your best to survive each event in each chapter, if you get any full auto medals bonus, and once you either beat the game or get stuck on a certain event, go back and attempt to get full auto medals on events you still need to do.
You don't need to be a racing expert to be able to get this, but having a racing background will definitely help speed up the process. I was able to obtain all full auto medals in about 7 hours, and most I obtained on my first run through, although I'm pretty familiar with racing games, so I would estimate that on the low side of completion time.
Sorry if you came here looking for an easy way to get this, unfortunately there isn't an easy way. If you get frustrated just take a break and come back to the race later. This should give you a rough timeframe and weapon class help hopefully.

Hopefully this will help due to how much vagueness there is around weapon tuning. When you finish Speed Kills chapter (not sure if you need all Full Auto, but I had on every race prior). It then opens up an option on all future races and previous to press X when on the weapon choice screen which adjusts the levels between Primary and Secondary. What it doesn't do is give additional weapon choices on previous races, those are still locked to what you are given you can just change the balance.
