There are four races in the Ambush series. These races claim to have enemies waiting for you near the end of the race, but I couldn't see any evidence of this. Maybe there's just a little extra rubber-band AI in effect during these races.
You need only meet the survivor (bronze) requirements for each of the four races in order to unlock the Achievement.

That's a good question. It's been seven years since I unlocked this. Let me do some digging and see if I can find it for you. IIRC the series typically unlock as you earn medals in previously unlocked series, but I'll see if I can narrow it down.

The, Can, Within
Basic down-and-back’s, except periodically ‘ambushers’ will jump in and try to eliminate you while your racing.
