Hot Pots occur when the pot gets to a specific amount.
Usually you want to stay in when you have a good hand, which is pocket pairs of a card (AA,KK,QQ,JJ,1010, etc.) or consecutive cards that have the same suit (AK diamonds, 98 spades, J10 clubs, etc.) You get the idea. If you go in with one of these hands when a hot pot occurs you stand a very likely chance of winning it. Once you do, the achievement will pop.

Just FYI for anyone hoping these still work...after the Summer 2012 update, these ARE NOW UNATTAINABLE.
Maybe they will do a "retro" event and turn them back on, but for now, they no longer work.
In 4 rounds of Texas Heat on 7/28/12 I won 2 Golds, multiple Hot Pots, and over 8 million chips...no achvs, just FameStar points earned.

A Hot Pot occurs when there has been enough chips entered. You can check how much is needed for the Hot Pot by pressing 
. Once the Hot Pot occurs, the announcer will announce "Hot Pot" and the chip icon next to the pot amount will be on fire. Win this hand to unlock the achievement.
**Note (22nd May, 2012): Despite the date, there are reports that the achievements are still popping.**
