When you first enter Old Mine Road, the first person you'll meet up with will be father torque. Simply use all available dialog options to unlock.
If you leave the conversation early, father torque will appear from time to time on old mine road again. This can be done anytime before launching over the gorge

When you go on Mine Road for the first time, Father Torque will appear and will talk to you. Simply use all the dialog options:

This trophy can be missed if you blow past the major parts of the story instead of taking the time to enjoy the scenery.
Riding along the Mine Road will be an old man, rather than the simple gang members you will come to teach some manners. This is the former leader of the Polecats and Ben's mentor, Father Torque. Exhaust all dialog options with him to retrieve this trophy.

After the fertilizer truck, continue down the road and take an exit onto a circuit. You will meet up with Father Torque. Choose all of the conversation options before selecting the bottom one to end the conversation.

After the ranch event, you'll need to chase Maureen. While on the road, take one of the Mine Road exits. Here, you'll encounter Father Torque. Speak to him entirely to get the trophy.
