How to unlock the I Can Do That achievement in Full Throttle Remastered - Definitive Guide

When at the bar a second time, talk to Emmet (the guy at the table with the knife). Just choose the option about playing/trying/showing him how to do it. You will need to repeat this option about 10 times until he gets annoyed with you and lets you have the knife. Once you get to the game, the achievement will pop.

After Corley dies and you go back to the Kickstand, convince Emmet to play the knife game by talking to him multiple times:

This trophy can be missed if you blow past the major parts of the story instead of taking the time to enjoy the scenery.

After witnessing Corley's murder and returning to the bar, pester the guy playing five finger fillet by telling him you could do better if he'd let you. After ten times of being pestered and hitting his own fingers, he'll let you try. All you have to do is simply register that you can now play it to get this trophy. Once it pops, you can find the exit arrow in the lower part of the screen to resume the story.

The second time you end up in the Kickstand Bar (after the murder, before you head to the Mink Ranch) there is a trucker named Emmet in the bar playing five finger fillet with a knife. If you talk to him, one option is "I can do that." He'll turn you down. There is then an option where you ask again. He'll turn you down again. Keep asking over and over and over again (something like 10-15 times) and eventually he'll actually change his response and let you do it, unlocking the achievement.

Before showing Emmet the fake ID in the bar to progress the story, speak with him. Keep choosing the first option until he lets you play with his knife.

After Malcolm's death, when you're back at the bar where the game started, you'll meet Emmet playing with a knife. Talk to him and tell him that you can do what he's doing. Do this 10 times and he'll let you play with his knife, and the trophy will pop. You don't have to actually play five finger fillet, you can move your cursor to the bottom of the screen to exit via a red arrow or even keep stabbing Ben's hand repeatedly to leave the minigame.
