Acorns can be found in the starting area at night. Zoning will force them to respawn. Try to hit them from behind or be aware of them spewing poison at you.

I'm not sure if I should be worried, because I've beaten a few of these guys and my tracking says 0%.

These are another basic enemy that can be found at night. You'll most likely get this through normal play if you spend time fighting at night. Otherwise, you can grind this out by staying awake at night and fighting them in Spring Hamlet. Time won't change as long as you don't sleep or die, so you can do this all in one night.
