There's already a guide for all collectibles on the Junk Runner achievement, so that is not the point of this solution.
Hey everyone, so there is a bug in this game that a lot of people have been hit by where they will get the achievement for getting ALL of the collectibles, but not the other individual achievements. There's actually a really simple way to avoid/fix this. The problem lies in assist mode. While assist mode doesn't disable achievements, it does, however, not unlock the three collectible achievements. To fix/prevent this, all you need to do is collect the LAST collectible in each category in classic mode. You can play through on assist mode and get everything else, and then just go grab the last three collectibles on classic mode, and they will unlock. Hopefully this helps someone out there. in other words.. do a new playthrough, and make sure the last collectible is in classic mode.
you haven't found a solution for those who already picked it up on assist? (without a full new playthrough)

Unfortunately not. Once you've got the collectibles they're gone from your entire campaign instance. The only way to set yourself up for another trigger is to start a new campaign to respawn the collectibles. Sorry :(
