.Your boost meter is the little blue crystals above your name and is gathered in the glowing blue areas, once you are about to score a point (Got ahead of the opposing players) hold down
to boost for the point.You can see the boost meter and the boost area in this screenshot.

In order to win a round, you need to score three points. You can boost using 
when you have collected diamonds (and can see your current diamonds in your character's diamonds bar at the top of the screen) and must do so as you are about to earn a point.
Basically, you need to go quickly enough that at least one opponent goes off screen. When they do, a counter will start counting down from 30. When it reaches 0, you need to be mid-boost and ahead of all opponents in order to earn the trophy.
Kairi
For this achievement, you will need to win a round while in the middle of a boost. In order to use a boost, you need to have crystals, which you can earn by going through the blue crystal areas that are through the map. I recommend having full bar of crystals before attempting this achievement; you can see how full your boost meter is with the crystals that are under your character at the top of the screen. Whiny are about to win a round, hit 
to boost. The achievement should unlock if you were mid-boost when you won the round.
