There are eight skins to unlock.
You unlock a skin for every 3 wins in the single race mode.
What I did was win all fifteen 'Easy' difficulty races, and then I won nine on 'Medium' difficulty.

Hello there, folks.
Today we're going to cover the 'Stylish' Achievement in Gigantosaurus: Dino Kart. This achievement will take over an hour to get, as we need to win 24 single races and races take 2-4 minutes each.
This Achievement unlocks for collecting all 8 extra Kart Skins, which are obtained by winning 24 of the Single Races(Adventure Mode races do not count; the races you need to complete are under the RACE option from the Main Menu). For every 3 Races won you receive a skin, and since we need to unlock 8, we need to win 24 races. The good news is that you can repeat the same races and you can play them all on Easy. If you want, though it takes a bit longer, you can play the first race 24 times to pop this Achievement, but I don't recommend it as you'll be sifting through menus a lot.
If you want to get it done as fast as possible, though, I recommend going through Adventure Mode first, getting those Achievements and unlocking all of the races for use in the Single Race mode.
Return to the Main Menu. Choose RACE, then RACE again. Choose whatever character you want, then, at the Race Select, use RB to add the following courses to a playlist:
Savannah Cove
Canyon Rush
Giganto’s Rock
Slalom on the River
Jungle Sprint
Jungle Tour
Mount Steps
Lava Pools
I think these are the 8 shortest, but since the game doesn't time you, its more of a judgment call.
Choose EASY and win all 8 Races in a row(should take 20ish minutes) and you'll unlock 2 skins. When you're finished, you are returned to the Main Menu, where you'll repeat the steps above. Winning all 8 races in the playlist again will unlock 3 more skins and return you to the Main Menu. Win all 8 races one more time to get your last 3 skins and unlock the Achievement.
