You decapitate skeletons by shooting their head off...obviously. You'll get this one without even noticing it, as skeletons are extremely common and you will randomly shoot their heads off without even trying.

To decapitate a skeleton you need to simply shoot it in the head. Though you can do this by aiming carefully for their heads, because of the spread on the weapons, it is best to simply play normally and this will likely pop around the same time as the 2500 creatures killed trophy. As long as you don’t aim for the feet, the spread will take the heads off of a few of them every time.

This should come naturally through your time playing the game. In case you are having trouble, just make sure to keep aiming for the head and send the skeleton heads flying.
