You won't get this simply by doing the main questline. Also, when you die the counter for the trophy seems to restart from the checkpoint.
You'll need to do a lot of exploring to get it. You can earn it after the final mission quest too back at your house.
The trophy counts enemies that may spawn upon returning to a previous map in the game.
Also, it is for 1,000 enemies not 2,000.

The Trials of Muspelheim get you a ton of kills. One of them alone requires 100 kills to complete it.

Have you tried doing a synch of trophies on the PS4? That sometimes makes them pop for me, although rare.
It was never reported as glitched as far as I'm aware. If the synch don't work, could always ask Santa Monica's support or Playstation's support. It might be a save file corruption, New Game+ might work.
