Oddjob is one of the hidden unlockable characters in Goldeneye.
To unlock him you must first finish the last (non-secret) mission ‘The Cradle’ on Agent difficulty.
Once you have Oddjob, simply play a match as him.

Just to add to NameOfTheMaster, you can also actually play multiplayer with a single controller too, there will be a banner across the top saying to connect additional controllers for each player, but Player 1 can still move and play as normal. That's how I did the 3 team scenarios without actually having enough controllers.

Oddjob is unlocked as a playable character in multiplayer upon completing the campaign (i.e. the mission Cradle) on any difficulty.
Once you complete the campaign and can play as Oddjob, simply start up a multiplayer game as Oddjob with any number of players, any map, and any settings. The achievement will unlock shortly after the game starts.

Easy way to get this once you have completed the story missions on Agent difficulty (through the Cradle mission):
Go to Multiplayer > Characters > Select Oddjob (2nd player will be auto selected if you don't have another controller hooked up) > Start game > As soon as game loads, press start and scroll over twice to Exit and end the game
Once back at the menu, achievement should pop.
