How to unlock the School's Out achievement in Grand Theft Auto: San Andreas – The Definitive Edition - Definitive Guide
Will be unlocked through story anyway since you need to finish the flight school.
If you wish to complete it earlier
- Advanced driving school, down the street from your garage in SF. unlocked after Deconstruction (3rd mission after going to SF), Jethro will call you to tell you about the school.
Will be required to complete to unlock the purchase of Wang Cars later on and export lists that are required in another achievement.
- Boating school. Not related to anything. Bayside marina, above SF. Unlocked after Ya Ka Boom Kang
- Biking school, below the Venturas stadium in the west. Not related. Unlocked after completing Ya Ka Boom Kang.

Just for a correction: the Driving School unlocked for me after Deconstruction. Once the mission was completed, I got a call from Jethro to go to the school. I wasn't able to access it before this.

It is very well worth getting all good medals in the flight school so that you unlock all the aircraft at your airport.
The parachute jump requires some swearing, as the definitive versions control of the chute is pure garbage compared to the original, and mobile disaster version.

Driving school in San Fiero is the first one and probably easiest one to do.
Big tip is to turn graphics on console to Fidelity instead of Performance, it will make you take less damage because you have a lower frame rate.

Sadly Fidelity is not an option on original X1

You need to unlock San Fiero. After that you need to wait for a call from Jethro talking that you're a crappy driver and should go learn some skills at the school. Then you will see S icon on your map, go to it and complete all the challenges, final one is called 'City Slicking' once you beat it you'll get the trophy. You don't need to get 100% on each for the trophy but if you do you'll unlock a special car outside the driving school.
