To complete this achievement, you'll need to collect all land and air peyote plants located across the map.
To find the locations of said plants, I recommend the following video from GTA Series Videos:
The whole processes can take anything between one and three hours.
Note: if a plant is missing, dying once should resolve the problem, but don't explode any dinghys near the locations, they will keep the area loaded and consequently the plant will not reappear. (this, which I believe is a glitch, happened to me three times in the X/S version).

For me the game says that there are 22 animals I can use in Director Mode.
Edit: It unlock after going into director mode and then picked one of the animals to walk around. So Wild Animal is not needed, even it can be used in Director Mode.

Got 3 animals left to unlock, I've done most of the Peyote Plants on old gen (PS4) then transferred my progress over to Xbox Series S. The animals I have left to unlock are Cormorant, Shepherd and Wild Animal. I followed the video from GTA Series Videos but the ones where he gets those animals, the peyote plants are not spawning for me so if anyone on Xbox Series can help me out with this please. Would be greatly appreciated.

To unlock all the animals for Director Mode you need to get all peyote plats that are on land (you do not need to get the ones that are underwater, as those animals are not in Director Mode). That is a total of 21 plants.
You can easily find the plants on http://gta-5-map.com/ (select the peyote plant icon on top - light blue with a circle on it). Look at the screenshot to see if a plant is on land or underwater.
After this you need to play as one of these animals in Director Mode.

In order to unlock all the animal characters, you must collect 21 of the 27 available Peyote Plant collectables located around Los Santos. The remaining 6 "Sea" located plants are not required for this achievement. Once you collect a plant, you will experience a brief moment as different animals. You can either play these experiences out (often last 10-15 seconds) or hold right on the to immediately end the experience.
