You only need 180 stars. The number 270 is counting the DLC events as well, I assume, since I don't have them. I finished first in every event and the achievement unlocked at the count of 180 stars.

Every event grants you a number of stars based on your results. The maximum amount of stars you can get are 3, for which you’ll always need to win the event. Therefore to obtain this trophy your assignment is simple, win every race the career has to offer. Special Episodes don’t grant any stars so you don’t have to beat those for this particular trophy, but you'll need to beat those to progress your career anyway.
