This can be done easily in race creator in race creator:

Modifiers: 0
Discipline: Circuit Racing
Class: Classic: Classic Oval Stocks
Vehicle: Jupiter CLassic Stock
Location: Indianapolis
Route: Oval Circuit
Conditions: Day
Laps: 1
Drivers: 2

You do not need to own the vehicle, you can loan it for the race.

It can also help to set the cifficulty to easy.

You need to first unlock "Complete Classic Oval Stocks Event 1" to unlock the Jupiter Classic Stock.
