Some events will be greyed out. To unlock them some require you to complete the invitational event before it in the list. Others require you to win certain class events. Most of them are in the GT series. For example winning 5 and 10 get events. Or a specific event. Once gold is achieved on all events the achievement unlocks.

You will unlock events by completing events within the other categories along with earlier events within the Invitational, each event tells you which one is required to unlock it. Once you unlock the event the category pits you in varying vehicle types with none being difficult. All events can be completed without amending any tuning settings for your vehicles.
