When you are racing in a Career race, your rival will have an orange helmet inside of a triangle above his name, much like your teammate has a green helmet. Simply finish ahead of your rival and the achievement will pop. I got this in the 1st event of the career in the Touring category

You will be able identify a rival by the fact they have an orange helmet inside of a triangle in the top left of the screen where it shows rankings. Simply finish ahead of this racer to unlock the trophy. You will have numerous opportunities for this and will come naturally when earning a gold in all events.
