Giant Skeletons are first found in Templo de Obsidiana and are distinguished as being unarmed and its heart is visible through the rib cage. Uay Pek's Head simply means "in chicken form" so press
when its health is low and finish it off for the achievement.

for those looking for one post game. If you go to Templo de Obsidiana, head left at the crossroad (air currents) and you will fly right over one. Simply drop down and kill it
