This is done in the "Wasteland" area of the "OFFLINE - DOJO - MISSION" mode. Scrolling halfway down the list until you get to "Sol Match-up Tutorial 1". I completed "Sol", "Ky", and "May", since they were the first 3 on the list.
NOTE: You must complete 3 different character missions. You can not complete the same mission 3 times using different characters (per DerTearBaer)
EDIT: I've found that Goldlewis (literally hold Up-Back
the entire time), Axl (block, block, jump forward), and Potemkin (block, mash 
) are much easier than Sol, Ky, and May. If you're having trouble finishing the first 3, look for those other characters.
For these challenges, you'll need to Interrupt a combo string from the opponents. I chose Sol and used his command normal Towards + Punch (
+ ) to interrupt their attacks. You have to block the first attack (or first and second for Ky's), then input the above command before their special attack hits. May's was the easiest, followed by Sol's, but Ky's was a bit harder due to the multi-hitting initial attack. There may be easier character missions, but those were the first 3 I played and I knocked them out in about 5 minutes once i understood the timing of Ky's attack.
You have to get at least 3 out of 5 attempts during the mission to count as "CLEARED". If you mess up the first 3 attacks, reset the mission and try again (or use the last 2 attempt for practice).

You can also use a simple A input on many of these as it has a quicker frametime than Forward+P.
Also, for anyone who might be confused, you need to complete three separate match-up missions. You can not do the same mission with three different charcters.

Good call on the "3 separate missions" note, i'll add that to the solution.
As for why I chose towards + punch, it gives upper-body invulnerability, so it might be easier/more consistent based on the missions chosen. I never tried kick, but depending on the character they choose, it might work better.
