To spectate a Player Match, you must stand in front of two cabinets in the lobby while two players are fighting and press the prompt for spectating (square with default controls).
Sadly, you can't just wait through the same two players playing 20 matches in a row. I haven't done extensive testing, but it seems as though you must leave a match for it to count. No matter how many matches are played in a row, it likely only counts as 1. Also, you only seem to get credit at the end of the match, since that's when my trophy popped. That means that you can't start spectating, get credit, then leave immediately.
All that to say, you should start spectating and leave after the first match ends. Spectating the same cabinet for subsequent matches should be fine, as long as you leave in between each.
