The song "Dream On" has exactly 500 notes on Medium difficulty. This song is extremely easy and will net you the achievements for gold- and five-starring a song on Medium or harder.

In the "Max's Kansas City" venue (2nd venue). After you beat "I Hate Myself for Loving You," and "All Day and All of the Night " Aerosmith will come out and play "NO SUPRIZE."
On MEDIUM the song is very easy and plays out with 575 notes. There are no tough solos or strange rhythm changes in the song. Very easy to get five stars as well.

I did this on the song Kings and Queens on Medium. Its a very easy song to beat the onyl hard part is after 400 notes. Thats where the solo it. I got caught up on one part though so I went into pratice tried it a couple times then tried the song again and passed.
I didn't use any of the other songs listed [though I'm sure they work fine] because I was trying to maximize my time (to gather $$$) by only playing hard or expert, so if you're looking for a easy hard song -- tier 1, all the young dudes.
I almost sightread it perfectly, messed up for no reason with 50 notes to go. 2nd try got it. So if you've got experience with GH games, and you don't already have this, grab some extra cash with your time and go for ALL THE YOUNG DUDES.

For this achievement you will need to find a song that has at least 500 notes first.
On Easy, the only songs with more than 500 notes are "Mama Kin" from the main setlist and "Mercy" and "Shakin' my Cage" from the Vault (bonus songs).
On Medium, the first song with more than 500 notes is "No Surprize". Although, "Walk This Way" was the song I got the achievement on.
On Hard, a good song for this is "All the Young Dudes" which has 587 notes and no fast sections.
