How to unlock the The Greatest Hunter achievement in Gun - Definitive Guide
There are 6 hunts to complete, and once they are done, you have earned this achievement. It requires a lot of running around the world map, but can be easily done:
First you must talk to the Indian hunter located near the Indian trader and Magruders' Mine.
* Grey Wold – Found at Dodge City railroad tracks or at the Hecht Ranch.
* Great White Buffalo – Found in the Badlands, near the old house.
* White Wolf – Found at the Indian Trader or at a house in Devils Slot Canyon.
* Great Mountain Lion – Found in the mining camp across from Magruder’s Mine.
* Black Wolf – Found in the Badlands, near the old house or Blackfeet Territory.
* Father of all Grizzlies – You will get a notification of where it is, it is west of Empire City.

You may want to mention when you gain access to the bow.

You need a bow to complete any hunt mission. Your first bow is unlocked in the mission 'Escape From Jail'. See also:

I just want to add a few things to porschephliac's solution:
- You can actually complete hunts with any weapon but you get more money with the bow. Without the bow the pelt will be ruined.
- Be careful of how you approach the area where the animal is located. If you gallop up too close with your horse you'll spook the animal and it'll take a while to respawn.
- If you spook the animal and need it to respawn, the easiest way is to complete a mission or side quest. You can also try saving your game when you get the hunting mission and then reloading when you spook it if you don't want to wait.
- Maybe I suck, but a lot of times my first shot wouldn't kill the animal, even with a clear headshot. If this happens, fill it with arrows as quickly as you can before it runs off and the kill will still be good. You can also go into slo-mo and kill it that way but you'll get less money since you used a gun.
- I advise not using the zoom to shoot since it'll be harder to fire off more arrows if your first shot doesn't kill it. Besides, if you do a good job sneaking up you'll be so close that you won't need the zoom.
- Some animals will attack you if you don't kill them on the first shot. The last wolf did this to me (though it also ran off at least once) and the grizzly will attack you for sure.
- When fighting the grizzly it helps to have the arrow upgrades so your arrows do more damage. Get close and fill it with a lot of arrows. It will charge you but you can sidestep its charge (if you don't get out of the way it can be a 1-hit kill depending on the difficulty level and your health stat). Make sure you aren't squatting while fighting or you'll be too slow to dodge effectively. When its health gets low it'll run away so be ready to jump on your horse and follow it, shooting arrows until it's dead. You probably won't be able to get enough arrows into it before it escapes if you are on foot. If the grizzly kills you, you'll restart at the point where you encounter it so don't worry about dying.

For an even easier way to complete almost all achievements:
do the cheat between the rocks. Via the new 'Gun' menu you can also select sidemissions. Select the last mission for Hunter (and pony express, ranch hand, rescue, bounty) and finish that mission --> instant achievements.
Sidenote: It does not count toward the 100% complion for the final gun collection.

other than explaining the glitch or posting a video of it (which you should just start new game it puts you in front of the rocks then you can jump from side mission to side mission) i dont see how this could be down voted. thanks for the tip!

Just FYI: Grizzly DON'T HAVE TO BE KILLED BY A BOW.
As I found him, I was already run out of arrows, so I tried to kill him with a double-peace-keeper. IT TOOK ONLY THREE SHOOTS!!!! He even didn't has a chance to get to me.

All the above solutions are great, and I just wanted to make something clear so it saves you time.
You can't use the side mission cheat and just do the grizzly mission, because it doesn't stack towards the 100% completion. You can use it to unlock this specific achievement, but you have to physically go up to the Indian Hunter each and every time to start each hunt and complete each and every one for it to count. For some reason not all of the hunts were in the cheat menu only the grizzly one. If you're having trouble with it and the Indian Hunter isn't spawning, I did these things to alleviate it:
1. Start a fresh new game on easy
2. Choose any mission that's almost towards the end of the game
3. Go to where the Indian Hunter usually is
4. If he's not there, just go to the cheat menu and hit "Toggle Help" and he'll spawn right in front of you.
I had this issue happen because I just did the Grizzly Hunting mission via the cheat menu and then he never re spawned again. This is just for people who are possibly having the same problem.
