Lantern Spirits are found in World 3, Duo Fjord.
Exploding Lantern Spirits are a modified variant. When you enter an area there is a pop up notification on the top right of the screen that will tell you what modifiers are on in the level.
They can be conjured up by Corrupt Monks, spawn naturally, or can be spawned by killing an enemy (much like how killed enemies can turn into Beetles or those fire Boars).
I'd recommend getting this while partied up, so you can be revived and keep moving on.
*Note this may be buggy. (I think if you have a status effect like burning effecting you the explosion doesn't count as killing you, but the burning does). It's also just hard to tell what kills you sometimes.

Just an FYI for people struggling like me, this is buggy. It took me 7 deaths to pop this one. You only need to go down, not necessarily fully die.

There are lantern spirits and exploding lantern spirits. Both look the same and appear on Act 3. Just pay attention to what ones are on the field.
