Great solution. Oddly enough, my opponent is who destroyed three of my cards. Yet I still received an achievement for it.

This is fairly hard to set up, unless you have the right cards. I used Geralt: Aard for this, as his Deploy ability lets him attack 3 units and do 3 damage to each of them.
Once you have him in your hand, it's a matter of waiting for an opponent to actually play three cards that can be destroyed by him.
You can also use cards with Consume abilities and just destroy your own cards. Anything with enough Consume charges would do the trick.
The hardest part of this achievement falls between getting lucky enough to draw the right cards, or having a unit survive long enough to fulfill the requirements. Personally, I got this while playing naturally, so unlocking it while going for other achievements is probably the preferable route.
