How to unlock the Sight Seeing achievement in Halo 4 - Definitive Guide
I had issues with this so I am posting an updated guide for how things work in Halo 4 as of now. 6/7/13
The achievement is for playing and completing a match on all 3 maps released with the Castle map pack DLC.

-Perdition
These can be obtained by joining a game in progress. But you HAVE to finish the map for it to count.
Now normally a guide for an achievement like this is really unnecessary in my opinion, because it's pretty obvious what the requirements are. But... This DLC is no longer it's own play list and they have also limited these maps to specific play lists. So it's harder to come across them.
Now here is the problem you will run into if you are trying to do this legit. The game has algorithms which will try to match you up with other people who have purchased the DLC. Unfortunately this system is seriously flawed and the odds are good that you wont match up with 6-8-10-12 other people who have it. So you might spend HOURS playing and never once see the map you want.
So, if you are going to boost this you are pretty much guaranteed to find the maps you are looking for provided you are in the correct play list.
Below are the play lists and which maps appear on them.
I have also taken the liberty of adding how many people are required for each play list. So if you do decide to boost it. You'll know how many people/extra controllers you will need.
Capture the Flag; Max party size 5. but it's 5v5 so I would avoid this one.

Outcast
Perdition
Infinity Slayer: Max party size 8.
Daybreak
Multi-Team: Max party size 12.
Daybreak
Outcast
Perdition
Action Sack: Max party size 8.
Daybreak
Outcast
Perdition
Dominion: Max party size 12.

Flood: Max party size 10.
Daybreak
Perdition
SWAT: Max party size 8.

If you are searching and your map doesn't appear simply back out and search again. Because you will have a full party it will be very quick to reload the map selections.
Personally I would say Team action sack is your best bet. Because it has a small party size and all of the maps. If you wanted to you could boost this with just 2 people if you each have 4 controllers.
You could do CTF Because you only need to play the map, not win. But because the max party size is 5 you will be 5 against randoms.

The Castle Map Pack contains three maps.
Sight Seeing - To earn this achievement, you need to complete/finish a match on all three maps. (Daybreak, Outcast and Perdition)
The achievement will unlock once the requirements have been completed.

Simply complete a full match of any game type on each of the new Castle maps: Perdition, Outcast, and Daybreak. This will come naturally within a few matches.
NOTE: Joining in Progress will not count towards this achievement. You must be in the match from the starting lobby.
