This is pretty self explanatory and should not pose any problems. The first level, 'Pillar of Autumn', is pretty quick and easy so that's probably your best bet. If you can't find anyone to play online with you can do this local by using splitcreen.
If you want to combine this with some other achievements you can play this on Heroic and/or Legendary and whatever account you want the achievements on should just stay away from the fight while you play on the second controller.
The Walk it Off achievement in Halo: Combat Evolved Anniversary worth 44 pointsComplete the level “Pillar of Autumn” on Legendary without picking up a health kit.
The Overshields are for Sissies achievement in Halo: Combat Evolved Anniversary worth 16 pointsComplete the level “Pillar of Autumn” on Legendary without picking up an Overshield.
The He’s Unstoppable! achievement in Halo: Combat Evolved Anniversary worth 44 pointsComplete any level on Heroic difficulty or higher without taking health damage.
If you are playing on Heroic or Legendary co-op, this achievement this will stack with those.
The Brovershield achievement in Halo: Combat Evolved Anniversary worth 28 pointsComplete any level on Heroic difficulty cooperatively.
The Bro Hammer achievement in Halo: Combat Evolved Anniversary worth 76 pointsComplete any level on Legendary difficulty cooperatively.

why would the account on which you want the achievement need to 'stay away from the fight'?

[DICA]: Joguei a primeira fase com 2 controles no LENDÁRIO com 3 crânios ativados. Daí foi só deixar o meu Spartan parado em segurança e jogar com o Spartan convidado.
Foi rápido, fácil e ao concluir pipocaram 7 conquistas, totalizando 175G.
