At the main menu screen press RB to go along to Customize. Select the second option down for Weapons Bench and then select any weapon with A and then select the emblem option and choose a different emblem. You can select from a few emblems straight away and any of these will unlock the achievement.
Edit: Thanks to the users in the comments for suggesting to use an emblem instead. Changing colour was my first option, but the new colours to choose from were only for players who played during launch.

Wouldn't let me select another colour for any weapon, but did let me choose an emblem for the achievement to pop 👍

Same as with The Thing on the Left is the Brake, colors aren't immediately unlocked but emblems are.
