How to unlock the Wanna Have a Catch? achievement in Halo Infinite - Definitive Guide
Having just unlocked this achievement, it can be completed even with the Bandana skull active. From what I noticed, if you die, it resets your progress for this achievement to where you were during the last checkpoint. This seems to be the main reason it is bugged, and despite playing on two separate playthroughs i never got it done. I highly suspect that this has to be done on one playthrough, and is not being counted on multiple playthroughs, so it is just resetting total progress.
Hopefully this helps.

+1 for being able to get this with bandana on. I just got it on my easy speed run post-game save with bandana and iwhbyd activated. Just grapple-sticked enemies til it popped. Took less than one stronghold

What do you have to do exactly? I don't know how to make a grenade stick to an enemy

As the other guides have said, this is a pretty straight forward achievement to stick 50 enemies with either the Plasma or Brute Spiker grenades. I have confirmed what others said that if you die after sticking an enemy but before a checkpoint, that progress usually does not get tracked by Microsoft.
Additionally, one really helpful thing I found was to combo the Grappleshot + Plasma grenade on brutes. Just find a group of enemies, Grappleshot onto a Brute and once you melee them, they will be stunned for a second (think you need the first Grappleshot upgrade) and then just stick them with the Plasma and jump away to not die from the explosion.

This counts sticks with both the blue plasma grenades and the spikey Brute grenades. If you're having trouble, try sticking grunts, or throwing one grenade, letting the enemy roll out of the way, and immediately following it up with a second grenade.
This achievement is a little buggy. It only tracks for one playthrough, so you need to get 50 sticks in a single save file. It also resets if you die. It might be worth starting an easy save file, just to focus on this achievement. You can activate the Bandana skull if you have it, to make this easier.
