You can get this achievement easily on the mission 'Exodus'.
*THIS IS EASIER WHEN PLAYING SOLO*
Load up Rally Point Bravo (on at least normal difficulty) and you should be waiting for the evac falcons. Wait for them to land and then kill one marine on the ground and one sitting inside one of the falcons. The marines will become hostile and start shooting at you.
Go near the falcon and you should see a prompt on screen which says 'press X to board enemy falcon'.
Press X and the achievement should unlock.
I don't really know why this works, I guess its probably because the achievement just unlocks when you board a flying enemy vehicle and a banshee is supposed to be the only one.
If you want to do it on co-op try killing a couple of the marines when the falcon lands until they become hostile (red dots on your map). Then just walk around the falcons and the prompt to board enemy falcon should appear. I can't confirm that it always works on co-op because I have never tried.

It does work in coop, i had a friend get it when i was playing with him in coop... delete solution...

I would also add that you can just kill the marines in the Falcon, you don't need to kill one next to you. I went around to the right, killed the gunner and both guys inside and then boarded and achievement popped. Good solution!

The easiest level to do this on is during the fifth mission found in the campaign, "Tip of the Spear". During the mission you will find a Jet Pack, this may come in handy if you need it. You can start at Rally Point B, which puts you at the part where your team flies the falcon into the Spire. As you near the spire, you will see Banshee's flying just before the Spire. On the left side, there is a Banshee that flies near the ground a lot and bumps into the ground. Follow this Banshee around until it dips low enough to get inside. Press and hold to hijack the Banshee.

You can also try stunning a banshee with a plasma pistol to get it down where you can reach it.

I've actually tried that before and was unable to Hi-jack the banshee. As in, the "Press X to Hi-Jack" didn't show up, even when I was right next to it.

For this achievement, load up the mission Tip Of The Spear, Rally Point Bravo on Heroic. You might consider it on Normal with Mythic skull (double enemy health) on as well, to prevent Jorge from downing the Banshees too quickly. Board the Falcon and take out the targets of opportunity along the way. You'll crash land shortly after encountering the EM shield. Work your way up the hill to the point where you can get to the Spire.
There will be a couple of Banshees flying overhead. Use an overcharged Plasma Pistol to stun one of them and bring it down. Run to its location. You might need to hit it once or twice more to keep it down till you can get to it.
Once you are near the Banshee, wait for it to come out of the stun (very important) then hold X to hijack it.
I found this way of doing it easier than trying to jetpack into one while it's still up in the air and it's a bit more in-character than the other solution, IMO.

This is how I did it too. I waited for it to run into one of the cliffs, they were stuck for a bit so I just gave the jetpack a little gas and pushed X for an easy board. I wasn't even going for the achievement.

Once again Achievement Hunter has our back. Geoff and Gus show us how to get this achievement.Play "Tip of the Spear" and use "rally point bravo". Grab the "jet pack" armor ability and use that to hijack a Banshee. There are a total of two of them in this area.
Thankfully the Covenant pilots are drunk and they can't fly straight. So they crash into mountains quite often and use the jet pack and jack that banshee.

toward the end of mission 9, the package, you are defending the entrance to the lab from waves of increasingly difficult enemies.
surrounding the entrance are multiple weapon caches.
on each side of the entrance there is a cache containing the grenade launcher.
pick up one of these and a jet pack, also found on the back wall.
jet on to the canopy roof above the entrance.
equip the grenade launcher.
when the banshees get close to you, fire your grenade launcher and hold the trigger down until the grenade is close to the banshee, release the trigger to cause an emp pulse that will disable the banshee but not destroy it.
time this right and the banshee will land right in front of you and be helpless for a few seconds, run up to it and mount as usual.
ping, achievement unlocked
this worked for me on legendary difficulty... maybe easiest on the difficulty as the enemies are quite aggressive so get close to you more often.

During the New Alexandria mission, you can get this achievement right at the start. Shoot the marines who would otherwise be your gunners in the Falcons, and pilot it alone. maneuver so you're right in top of one of the Banshees that are already flying around everywhere, and bail. Then steal one. It took me about 6 tries.
Alternatively, in multiplayer, you can drop your passenger(s) on the roof of the smaller tower facing the New Alexandria Hospital. The banshees there swoop close enough that you can sprint-jump into hijack range off the edge. Obviously, you want a hot LZ, so don't shoot anything down.

This is actually stupid easy to do. All you need is a plasma pistol. Just hit any low flying Banshee with a charged plasma pistol bolt and it will drop from the sky since the plasma pistol shot will stall the Banshee. Once it's on the ground just sprint over and hijack it. This may sound difficult but Banshees tend to move slower than syrup in Reach, making it remarkably easy to land a shot. It works on any level with a Banshee, but "Rally Point Bravo" on the level Tip of the Spear is one of the best locations to do this, since you have plenty of room to run around. I found this to be much easier to do than trying to board them with jet packs. Hope this helps.

You must steal a Banshee with someone driving it, you can get it on mission 5 "Tip of the Spear", if you have done this mission before I recommend putting it on Normal difficulty and starting from the point: "Rally Point Bravo".
Progressing on this mission you will receive an objective "Access Covenant Spire Control Room" (remember to be equipped with the jetpack), at that point you should find a Banshee flying in that area, go up a hill and wait for it to approach, as soon as it is close to you fly with the jetpack close to it and a notification will appear in the upper right corner under your weapons telling you to steal the Banshee, hold
and then the achievement will be unlocked.
note: Sometimes it can end up going down and hitting some mountains.
