Thomas is the Ogre that you meet during the Temperance Challenge. During the encounter you have the option to fight him with the villagers or refuse to fight him.
In order to unlock this Achievement you need to choose to fight him and then win the combat against him. Note that this will not unlock his card Token. Thomas fights the same as Draknar so expect to dodge his club regularly and having high armor and max life really helps.
Once this Challenge is completed you receive the card for Thomas the Ogre so you can take it into other challenges if you choose.

I've found a way to beat ogres without ever taking damage, which should help those struggling with this achievement.
Every ogre has a counter-attack that is so quick that you will likely not be able to react in time to avoid it, but if you're already dodging as you hit him, you'll be out of the way in time, no problem.
Use a heavy weapon; attack once - just once - and immediately roll away. In fact, you can start the command to roll away in the middle of your attack.
Make sure you have room to roll away from the ogre in whichever direction you've chosen. If the ogre is near the edge of the combat area this is pretty easy to do.
The only time I've found that it's safe to attack more than once is if your single attack fills up the RT move, in which case you do the following:
Attack -> RT -> attack -> dodge/roll away

Thanks for the combat tips! I'll add one more thing about the Ogre's attacks. He has two basic attacks, one which you cannot counter and one which you can. When he attacks with a strike you can counter if you Counter it then he will immediately follow up with another attack you can counter, then immediately a large strike that must be dodged. This strike will get his club stuck in the ground for several seconds, giving you a free pass for multiple strikes. Also remember that when your special move is available you are invulnerable during it so go to town using it to protect yourself from being hit.
