How to unlock the Juggernaut achievement in Hand of Fate - Definitive Guide
Your hero needs to have 150 of more physical health, just not capacity. Also, this achievement is NOT OBTAINABLE ON APPRENTICE DIFFICULTY
If you own the Wildcards expansion, then an easy way to earn this achievement is to start up endless mode and choose the Lion Prince as your hero instead of the adventurer.
You begin the game with only 40 maximum health, but you earn +2 max health for every enemy you kill. And endless mode starts out rather easy, putting you against 2-3 dust for the first few levels. So the general strategy here is to pick all of the options that will lead to battles, and then pick the largest number of enemies that you're confident beating. That is, on the first level you should choose a 3 dust battle over 2 dust, so that you earn 2 additional max health. Battle in the crucible, kill the ratmen hunting party, enter the cave shelters, brawl at the taverns. Definitely take advantage early when the enemies are simple, and by level 5-6 of the endless dungeon you should hopefully be >110 health from battles alone.
Because endless mode ramps up the number of enemies per battle, towards levels 7-8 when you are fighting 10+ enemies per battle, those battles will give you 20+ Max Health with Lion Prince. At my peak, I had over 250 health with the Lion Prince as Max Health Gains can increase your health past the 200 battle cap from this hero's ability.
If you don't own the expansion, then I think endless is still a good way to go. Fighting the Dealer can be a bit annoying as the enemies can be ridiculous right off the bat and there are many opportunities to have curses and pain cards that sap your max health. You can try to land on "Secret Society" but the luck factor of finding the card and getting huge success isn't all that enticing to me personally.
There are a few other things that can help you with this achievement in general.
1. Saint's Ring: This is obtained by completing the charity quest line. See the following solution for how to obtain it. It gives you +5 max health per blessing, so you should try to obtain blessings from events and hope to find this ring in a shop. This clearly won't help if you're playing the Dealer deck, which is why endless is another nice way to go.
2. Maiden: Default event card, just choose "Longer Life" to draw a max health gains card.
3. Poverty Ring :+1 max health for every 5 gold you have when selling it. (You lose all gold after selling). Look for it in shops.
4. Desert Cult: This one is a gamble. If you offer your blood, you will draw 2 health pain cards. Ideally these would be to your health, but they can also be -Max Health. There are two outcomes when you donate blood, Either a blessing which you don't want, or +15% Max Health. If you get lucky, the +15% max health will overpower the max health loss from the pain cards, but if you're risk adverse perhaps avoid this card.
5. Soul Gem: This requires you to beat the Dark Crystal quest line. Upon landing on this you can simply choose to increase your maximum health.
6. The Lonely Bard: Again it's a gamble You pay 10 gold and either draw a max health gain card, or a max health pain card.
7. Ring of Defense. You must complete Soldier's on Leave by giving them 3 helmets. With this ring you earn 5 max health every time you gain a helm, gauntlets of shield, so stock your deck with them, or buy them from shops.
8. Ring of Fulfillment (perhaps DLC? I can't recall): 1 max health per food. This is perhaps the easiest way to get tons of health. Find the "shop" where you are allowed to purchase 10 food for 30 gold.
9. Plunderer's Cap (credit: McGubbalo): Allows you to pick 2 gain cards at a time and select the one to choose. While it doesn't directly give you +Max Health, it helps you by giving you more chances to draw +Max Health as a gain reward.

Plunderer's Cap is a HUGE HELP!
It allows you to draw two gain cards and choose which one to keep, every time you draw a gain card. It's worth its weight in gold!

Ah, I forgot about that one, because it doesn't directly give +Max Health. It's definitely nice once your gains deck has a ton of +Max Health cards. I'll add that to the list.

I unlocked this achievement using the Lion Prince persona. With the skeleton king sword equipped, I fought the Jack of Skulls. Repeatedly kill his 3 henchmen for a +2 max health gain, then let him constantly revive them. Once your max health hits 150, spam the health drain ability on the left bumper to heal yourself up to 150 and earn this achievement. Hope this helps!
Don't over-complicate this. Just wait until you get the Ring of Fulfillment and you will get this easily. All you have to do is buy food. simple enough.

I actually I didn't get this from buying food with this ring. I was over 160 health and thought this wouldn't do it. Then I came across the Maiden card, got more life and this popped at 170 health.

Obtaining this achievement becomes much easier after you have unlocked most of the cards and tokens.
I unlocked this Story Mode Jack of Scales
Customise Your Deck, Press Y on each encounter card and any card which says Max Health include in your deck. Also include cards such as Loan, Treasure Chest, Shop, Embertown Hero. Anything which gives the opportunity for Gain Cards.
I was lucky first I hit the The Maiden and asked for longer life. I then Landed onEmbertown hero and drew 3 gain cards 1 was for 15 max health, finally I hit Deadmans Gorge which is an encounter card exclusive to that level, after defeating the monsters I drew two gain cards One was for 15 max health the other was 15% Max health.
I had unlocked the achievement within 4 moves, but those gain cards are unlocked only after playing the game for some time.
Other cards for this achievement are Soul Gem, lonely bard, devils carnival, tavern wager, battle at brooktop,devils wager, devils choice, . However the devil cards are very very luck dependant.

You cannot get this trophy by playing on Apprentice difficulty.
Gain cards can give you +x% extra health, Health Tonic: Gain 5, 10 or 15 Max Health. The Maiden, Desert Cult and the Soul Gem can provide a max health boost. There is an easier way - the Ring of Contentment, the point is that all food gives +1 to HP (that is, we buy 50 units of food and max HP will become +50)
