How to unlock the Release the Minotaur! achievement in Hand of Fate - Definitive Guide
The Minotaur Encounter refers to one of the cards you can walk onto in the game. A somewhat-late occurring card, it can only be added to your Encounter Deck after besting the Queen of Scales, the tenth Court Boss (first of the last row).
The Encounter is simple, kill a Minotaur. Doing that is a might bit difficult if approached like any standard combat. The Minotaur is fast, hits hard, and doesn't flinch when hit by your weapon. He has two standard attacks; one is a chain of four melee attacks which is unblockable, and the other is a charge.
While there is a window of opportunity to batter him with two hits after he finishes his chain, I found it much safer to get some distance between him and you. He will charge and, if you maneuver correctly, will bash right into a wall and become stunned for a moment or two. This is the time to pounce on him with two swift blows and then roll away quickly; the Minotaur is quick to retaliate.
The arena in which you fight him in is littered with pillars that he can smack into and become stunned, so having an awareness of his charge trajectory is critical if you want to get your two hits off.
Play this one safe, and be patient.

Also, as far as killing the mighty bull goes, I recommend using Blood Crescent if you have it. One LB shot and it's over ;)
However, it didn't pop for me on killing the Minotaur. There are some follow up events though after unlocking the token (The Tavern i believe it was?) and I guess I'm gonna have to complete that (and tricky it is, success doesn't unlock the token).

You can get the achievement in Apprentice mode as I just found out.

The achievement is awarded by completing Minotaur maze which is a challenge card that contains a fight VS one Minotaur. When you land on it be sure to select "fight" option.
The Minotaur is HUGE and nasty.....you basicly want to strike him after he swings his giant ball and chain 4 times and you can only land 2 hits before you must roll away from his next attack. He also will perform a "charge" attack, this attack is easy to prepare for because he will kick both his feet back one by one and then charge you. Once again strike him twice and roll out.
Any weapons with the bonus LB attack would be great for this challenge however I beat it with a regular Axe.
It took me about 15 hits to defeat the Minotaur so his health is quite high.

As you advance in the story mode, you will eventually unlock the Minotaur encounter so kill it to pop the trophy. I found this the easiest fight of the lot because although he has loads of health, he has no ranged attacks. I went for a classic, hit, roll, run, hit, roll, run strategy and killed it without any issues.
