While this is something that will no doubt come naturally though a playthrough (certainly on Ace difficulty), it can be done easily enough on the first mission. At the end when you take on the 4 planes, simply bash your plane on the ground or against a mountain a few times, don't do it too hard as you'll explode, and you'll know when you're below 25% because your plane will have smoke billowing out of it, as well as your health bar being below the very last notch.

You will probably get this trophy naturally as you’re playing through the game. If not, play through a mission until you get to the final checkpoint. Now, purposely incur damage by letting enemies hit you, flying through trees, or scraping the ground. Your health bar is separated into four sections; lower your health until it is within the final quarter before finishing the mission.

Have a look at your Health Bar in the top left hand corner. It is broken up into quarters. Simply finish a mission while your health is in the last Quarter (it will be Dark Red in color).
