When I go to track opportunity it doesn't give me an option to hit the A button so I can track it.

I think I see the confusion. Hit the back button and go to the opportunity page and highlight the one you want to track and hit down on your D-pad which will highlight track and give the option to start tracking it.

The video is somewhat out of date because the guard station in the parking lot was removed in an update. Also the video poster talks incessantly plus complains about receiving a text message midway through. In any event, I don't think a video for a tutorial was even necessary.

Main menu > scroll over to Contracts using RB > Contract Creation Tutorial > Play.

Really easy, just remember what you did in the main game tutorial and you can bypass the guards easily on this one as well.

After completing Freeform training, enter the Contracts tab from the Main Menu. Follow the prompts from here until you complete the Contracts tutorial on the yacht mission. The achievement will unlock upon finishing the tutorial.
