How to unlock the The Seeker of Knowledge achievement in Hogwarts Legacy - Definitive Guide
Upon completing the last main story quest "The Final Repository" you'll unlock "The House Cup" quest. Before you can start this quest you'll need to reach level 34. Once started the quest simply consists of a lengthy cut scene followed by the Hogwarts Legacy end game credits. The achievement will pop once you've finished watching the credits.

I skipped the credits and it did not unlock. It only unlocked after I reloaded and fully watched the credits.

Complete the main story quests (marked with the yellow badge) and reach level 34. Once triggered, you’ll get the end credits.
This is final main quest and requires level 34 to initiate. Upon completion, your achievement will pop.

But considering you need to be level 40 for the A Forte for Achievement (80G) and do a hell of a lot more work for the Collector's Edition (40G) achievement, level 34 will come naturally while you go for them.
And because everything in Hogwarts Legacy nets you experience, it won’t take long before you’re flying through the levels and into the House Cup.

You will be allowed on the final task only when you reach character level 34.
