The White Defender is the Dream Version of the Dung Defender.
In order to fight him you have to return to the Boss room in the Royal Waterways after you defeated all three dreamers and use your Desolate Dive on the floor below the platform in the room where you turned the crank after the original boss fight.
His moveset is pretty much the same, he just has even more health and is faster.
Level up your health/nail as much as possible, use Fragile Strength/Life charms for this as it is a dream fight, which means they cant break and you should be fine.
