You unlock the extreme events after you defeat the last (fifth) (Nitro-)Boss.
I personally recommend a race event or an elimination race because they are linked with the difficulty you set in the options.
So, when you play on easy for example, the extreme race event is still very easy and you should have no problems. To make it even easier, you can use a vehicle you tuned up to ultimate.
After you get first place, the achievement will unlock.

You can find the Extreme events in the map by looking for the events that have embers/sparks/fireflies floating above them (also, their hexagon is glowing yellow). They only appear after you beat all five bosses.
