Very easy to do. Just go to Single Race mode, and in the track selection screen you can press 
to toggle between normal and mirrored modes for any given track. Switching it over will put a little symbol next to the outline of the track itself and once that's done you can back out to the main race screen and launch the race. After that, you just need to complete the race and it doesn't matter which position you come in, just make it to the end and you'll get the achievement.

Select Single Race and select any mode you wish. When selecting track press square and it will switch to the mirror version of that track. Complete a race on that track.
